Ingredients
- 25 g Parsley
- 1 kg Whole Farm Premium Brown Rice
- 200 g Orange Carrot (Gajar)
- 1 pc Avocado Indian Premium Semi Ripe
- 2 ltr Figaro Extra Light Olive Oil
- 250 ml Dabur Hommade Lemon Juice (Bottle)
- 250 g Tauffa Sunflower Seeds
- 550 g Eat Anytime Flax Seeds
- 100 g Kale Leaf
- 1 kg Akar Powder Salt
- 100 g Everest White Pepper
Instructions
- 1. In a medium saucepan, bring 1/2 cup of brown rice and 1 cup of water to a boil over high heat. Reduce the heat, cover, and simmer for 20-25 minutes until the water is absorbed. Remove from heat, fluff with a fork, and let cool.
- 2. Using a grater or food processor, shred 3 medium carrots into thin strips. Set aside.
- 3. In a large mixing bowl, combine the cooked brown rice, shredded carrots, 2 cups of fresh kale, and 2 tablespoons of chopped parsley.
- 4. In a small bowl, whisk together 1 tablespoon of olive oil, 1 tablespoon of lemon juice, 1/2 teaspoon of salt, and a pinch of white pepper. Drizzle this dressing over the salad mixture and toss gently to combine.
- 5. Slice 1 ripe avocado and arrange the slices on top of the salad. Sprinkle 2 tablespoons of sunflower seeds and 1 tablespoon of flax seeds over the salad for added crunch and nutrition.
