Ingredients
- 500 g Spt Frozen Mixed Vegetables
- 100 g Sambar Onion Peeled
- 25 g Parsley
- 50 g On1Y Black Peppercorns With Grinder
- 400 g Agapi Protein Greek Yogurt (Natural)
- 200 g Organigram Chia Seeds
- 50 g Zoff Premium Indian Bay Leaf
- 1 pc (52 g) On1Y Paprika Powder
Instructions
- 1. Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
- 2. In a large bowl, combine 3 cups of cooked long grain rice, 1 cup of mixed vegetables, 2/3 cup of finely chopped onion, 1 cup of greek yogurt, 2 tablespoons of chopped parsley, 1 bay leaf (remove before baking), and 1/2 teaspoon of black pepper. Mix well until all ingredients are evenly distributed. For the chia seeds, mix 6 tablespoons of water with the seeds and let sit for 5 minutes to thicken before adding to the mixture.
- 3. Transfer the mixture into the prepared baking dish, spreading it out evenly.
- 4. Sprinkle 1 cup of shredded reduced-fat cheddar cheese over the top and lightly dust with paprika for added color and flavor.
- 5. Bake in the preheated oven for 30 minutes, or until the top is golden and the dish is heated through.
- 6. Remove from the oven and let cool for 10 minutes before serving. Garnish with additional parsley if desired.
