Ingredients

  • 500 g Spt Frozen Mixed Vegetables
  • 100 g Sambar Onion Peeled
  • 25 g Parsley
  • 50 g On1Y Black Peppercorns With Grinder
  • 400 g Agapi Protein Greek Yogurt (Natural)
  • 200 g Organigram Chia Seeds
  • 50 g Zoff Premium Indian Bay Leaf
  • 1 pc (52 g) On1Y Paprika Powder

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
  2. 2. In a large bowl, combine 3 cups of cooked long grain rice, 1 cup of mixed vegetables, 2/3 cup of finely chopped onion, 1 cup of greek yogurt, 2 tablespoons of chopped parsley, 1 bay leaf (remove before baking), and 1/2 teaspoon of black pepper. Mix well until all ingredients are evenly distributed. For the chia seeds, mix 6 tablespoons of water with the seeds and let sit for 5 minutes to thicken before adding to the mixture.
  3. 3. Transfer the mixture into the prepared baking dish, spreading it out evenly.
  4. 4. Sprinkle 1 cup of shredded reduced-fat cheddar cheese over the top and lightly dust with paprika for added color and flavor.
  5. 5. Bake in the preheated oven for 30 minutes, or until the top is golden and the dish is heated through.
  6. 6. Remove from the oven and let cool for 10 minutes before serving. Garnish with additional parsley if desired.
