Ingredients

  • 100 g Curry Leaves
  • 500 g Onion
  • 500 g Toor Dal
  • 200 g Table Salt
  • - Coriander Powder
  • 100 g Jeera
  • 100 g Yellow Mustard Seeds
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • Pcs Everest Hing 10 Gm

Instructions

  1. 1. Rinse 1 cup of toor dal (split pigeon peas) thoroughly under running water until the water runs clear.
  2. 2. In a pressure cooker, add the rinsed toor dal along with 3 cups of water, 1/4 teaspoon of turmeric powder, and a pinch of asafoetida (hing).
  3. 3. Close the pressure cooker lid and cook the dal on medium heat for 3-4 whistles, or until the dal is soft and fully cooked.
  4. 4. While the dal is cooking, heat 2 tablespoons of coconut oil in a pan over medium heat.
  5. 5. Add 1 teaspoon of mustard seeds and let them splutter. Then, add 1 teaspoon of cumin seeds and let them sizzle for a few seconds.
  6. 6. Add 10-12 fresh curry leaves, 2-3 dried red chilies, and 1/4 teaspoon of asafoetida (hing) to the pan. Sauté for a few seconds until the curry leaves become aromatic.
  7. 7. Add 1 finely chopped onion and sauté until it turns translucent.
  8. 8. Add 2 finely chopped tomatoes and cook until they become soft and mushy.
  9. 9. Add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and 1 teaspoon of coriander powder. Mix well and cook for 1-2 minutes.
  10. 10. Once the dal is cooked, open the pressure cooker and mash the dal lightly with a ladle or a whisk.
  11. 11. Add the cooked dal to the pan with the onion-tomato mixture and mix well.
  12. 12. Add 1 cup of water to adjust the consistency of the soup, and bring it to a gentle boil.
  13. 13. Season with salt to taste and let the soup simmer for 5-7 minutes on low heat, allowing the flavors to meld together.
  14. 14. Garnish with freshly chopped coriander leaves and serve hot with steamed rice or roti.
