Ingredients
- 100 g Mint Leaves
- 100 g Coriander - Chopped (Kothimbir)
- 500 g Pluckk Organic Hybrid Tomatoes
- 50 g Sakthi Curry Powder
- 1 Combo True Elements Jowar Flour,True Elements Bajra Flour,True Elements Quinoa Flour
- 2 ltr Figaro Extra Light Olive Oil
- Pcs Dhouti Yog Churn
Instructions
- 1. Slice the tomatoes into thick rounds and place them in a bowl. Sprinkle them with 2 tablespoons of curry powder and 2 tablespoons of flour, ensuring they are evenly coated.
- 2. Heat 4 tablespoons of olive oil in a frying pan over medium heat. Fry the coated tomato slices for 2-3 minutes on each side until they are lightly golden brown.
- 3. Remove the fried tomatoes from the pan and place them on a plate lined with kitchen paper to drain excess oil.
- 4. In a small bowl, mix 14 tablespoons of olive oil with 6 tablespoons of finely chopped fresh mint and 4 tablespoons of finely chopped fresh coriander. Add for flavor and stir well.
- 5. Arrange the fried tomatoes on a serving plate and serve alongside the mint and coriander mixture.
