Crispy Tofu & Quinoa Stir-Fry recipe

Ingredients

  • 100 g Quinoa
  • 1 kg Bell Peppers
  • 200 ml Sesame Oil
  • 90 g Dark Soy Sauce
  • - Rice Vinegar
  • loose Ginger
  • 100 g Garlic
  • - Coriander Powder
  • 50 g Cumin Powder
  • 20 g Turmeric Powder
  • 100 g Salt
  • 50 g Black Pepper
  • 1 bunch Spring Onion

Instructions

  1. 1. Rinse the quinoa thoroughly and cook it in boiling water until soft, around 15 minutes.
  2. 2. Cut the tofu into cubes and pat dry with a paper towel to remove excess moisture.
  3. 3. Heat sesame oil in a pan and fry tofu cubes until golden and crispy, then set aside.
  4. 4. Mince the ginger and garlic finely and sauté them in the same pan until fragrant.
  5. 5. Slice the bell peppers, carrots, and green beans into thin strips and add to the pan.
  6. 6. Stir-fry the vegetables on medium heat for 5-7 minutes until slightly tender but still crisp.
  7. 7. Mix soy sauce, rice vinegar, coriander, cumin, turmeric, salt, and pepper in a small bowl.
  8. 8. Add the cooked quinoa to the pan, followed by the crispy tofu and spice sauce.
  9. 9. Toss everything together for 3-4 minutes to ensure even coating and heating.
  10. 10. Garnish with freshly chopped spring onions before serving hot.
