Ingredients
- 100 g Quinoa
- 1 kg Bell Peppers
- 200 ml Sesame Oil
- 90 g Dark Soy Sauce
- - Rice Vinegar
- loose Ginger
- 100 g Garlic
- - Coriander Powder
- 50 g Cumin Powder
- 20 g Turmeric Powder
- 100 g Salt
- 50 g Black Pepper
- 1 bunch Spring Onion
Instructions
- 1. Rinse the quinoa thoroughly and cook it in boiling water until soft, around 15 minutes.
- 2. Cut the tofu into cubes and pat dry with a paper towel to remove excess moisture.
- 3. Heat sesame oil in a pan and fry tofu cubes until golden and crispy, then set aside.
- 4. Mince the ginger and garlic finely and sauté them in the same pan until fragrant.
- 5. Slice the bell peppers, carrots, and green beans into thin strips and add to the pan.
- 6. Stir-fry the vegetables on medium heat for 5-7 minutes until slightly tender but still crisp.
- 7. Mix soy sauce, rice vinegar, coriander, cumin, turmeric, salt, and pepper in a small bowl.
- 8. Add the cooked quinoa to the pan, followed by the crispy tofu and spice sauce.
- 9. Toss everything together for 3-4 minutes to ensure even coating and heating.
- 10. Garnish with freshly chopped spring onions before serving hot.
