  • 500G Loose Besan
  • - Rice Flour
  • - Red Chilli
  • 20 g Turmeric Powder
  • 50 g Cumin Powder
  • 45 g Garam Masala
  • 100 g Salt
  • 1pc Watermelon
  • - Coriander Powder
  • 250g Green Chilli

Instructions

  1. 1. Rinse the fish fillets thoroughly and pat them dry using a clean kitchen towel.
  2. 2. Cut the fish into bite-sized pieces, ensuring they are even for uniform cooking.
  3. 3. In a mixing bowl, combine chickpea flour, rice flour, and all the dry spices thoroughly.
  4. 4. Add the ginger-garlic paste, salt, green chili, and water to form a smooth, thick batter.
  5. 5. Stir in finely chopped coriander leaves for an added burst of freshness.
  6. 6. Heat the vegetable oil in a deep frying pan over medium heat until hot but not smoking.
  7. 7. Dip the fish pieces into the batter, ensuring they are evenly coated.
  8. 8. Gently slide the battered fish into the hot oil, frying in small batches to avoid overcrowding.
  9. 9. Fry the fish pakoras for 4-5 minutes, turning occasionally, until golden and crisp.
  10. 10. Use a slotted spoon to remove the pakoras and drain them on paper towels to remove excess oil.
  11. 11. Repeat the process with the remaining fish pieces until all are fried.
  12. 12. Serve the pakoras hot with mint chutney or a squeeze of fresh lemon for added tang.
