Ingredients
- - Besan
- - Rice Flour
- 500 g Onion
- 250g Green Chilli
- loose Ginger
- 100 g Coriander Leaves
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli
- 45 g Garam Masala
- 100 g Salt
- 250 ml Lemon Juice Concentrate
- 200 ml Mustard Oil
- 1pc Watermelon
Instructions
- 1. Soak the soy chunks in hot water for 10 minutes and squeeze out excess water.
- 2. Finely chop the onion, green chili, ginger, mint leaves, and coriander leaves.
- 3. In a mixing bowl, combine besan, rice flour, turmeric, red chili powder, garam masala, salt, and water to make a smooth batter.
- 4. Heat oil in a pan and sauté the onions, ginger, green chilies, and cumin seeds for 2 minutes.
- 5. Add the soaked soy chunks to the pan and cook with the sautéed mixture for 5 minutes.
- 6. Add lemon juice and chopped coriander, mixing well, then let the filling cool slightly.
- 7. Heat a dosa pan or flat griddle and lightly grease it with oil.
- 8. Dip the soy chunk mixture into the batter, coating it evenly, and spread it on the pan.
- 9. Cook the rolls on medium heat, flipping occasionally, until golden and crispy on both sides.
- 10. Blend mint leaves, coriander leaves, green chili, lemon juice, and salt to make a mint chutney.
- 11. Serve the crispy soy chunk rolls hot with the mint chutney for dipping.
