Golden-brown fritters made with protein-packed moong dal and fresh spinach, spiced with fragrant Indian herbs, served with tangy mint chutney.
Ingredients
- 500 g Onion
- 250g Green Chilli
- loose Ginger
- 100 g Coriander Leaves
- 100 g Jeera
- - Rice Flour
- 100 g Salt
- 50 g Black Pepper Powder
- 250 ml Lemon Juice Concentrate
Instructions
- 1. Soak the moong dal in water for 4 hours, then drain and grind to a coarse paste.
- 2. Wash and finely chop the spinach leaves and coriander leaves.
- 3. Finely chop the onion, green chilies, and ginger, and mix them with the spinach and coriander.
- 4. Combine the moong dal paste with the spinach mixture, rice flour, cumin seeds, salt, and pepper to form a batter.
- 5. Heat oil in a deep frying pan over medium heat until hot but not smoking.
- 6. Drop small scoops of the batter into the oil and fry until golden and crisp, turning occasionally for even cooking.
- 7. Remove the fritters with a slotted spoon and drain on paper towels to remove excess oil.
- 8. For the mint chutney, blend mint leaves, lemon juice, green chili, salt, and a splash of water into a smooth paste.
- 9. Serve the crispy fritters hot with the tangy mint chutney on the side.
