Golden-brown fritters made with protein-packed moong dal and fresh spinach, spiced with fragrant Indian herbs, served with tangy mint chutney.

Ingredients

  • 500 g Onion
  • 250g Green Chilli
  • loose Ginger
  • 100 g Coriander Leaves
  • 100 g Jeera
  • - Rice Flour
  • 100 g Salt
  • 50 g Black Pepper Powder
  • 250 ml Lemon Juice Concentrate

Instructions

  1. 1. Soak the moong dal in water for 4 hours, then drain and grind to a coarse paste.
  2. 2. Wash and finely chop the spinach leaves and coriander leaves.
  3. 3. Finely chop the onion, green chilies, and ginger, and mix them with the spinach and coriander.
  4. 4. Combine the moong dal paste with the spinach mixture, rice flour, cumin seeds, salt, and pepper to form a batter.
  5. 5. Heat oil in a deep frying pan over medium heat until hot but not smoking.
  6. 6. Drop small scoops of the batter into the oil and fry until golden and crisp, turning occasionally for even cooking.
  7. 7. Remove the fritters with a slotted spoon and drain on paper towels to remove excess oil.
  8. 8. For the mint chutney, blend mint leaves, lemon juice, green chili, salt, and a splash of water into a smooth paste.
  9. 9. Serve the crispy fritters hot with the tangy mint chutney on the side.
