- 3. Gradually add water to the dry mixture while whisking to form a smooth, lump-free batter of medium-thick consistency.
- 4. Heat the oil in a deep frying pan over medium heat until it reaches frying temperature (around 180°C).
- 5. Dip each eggplant strip into the batter, ensuring it is fully coated, and then gently shake off any excess batter.
- 6. Carefully lower the coated eggplant strips into the hot oil, frying them in batches to avoid overcrowding the pan.
