- 1 kg Yellow Moong Dal
- 200 g Cauliflower Florets
- 1 pack (500 g) Daily Good Besan / Gram Flour / Chana Besan
- 1 pack (500 g) Bhagyalakshmi Rice Flour
- medium Chilli Green Long
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
- loose Ginger
- 100 g Popular Essentials Jeera (Cumin Seeds)
- 20 g Turmeric Powder
- - Red Chilli Powder
- 100G Sur Black Salt
- 50 g Puramate Baking Soda
- 5 ltr Guinea Filtered Groundnut Oil For Frying & Sauteing
Instructions
- 1. Rinse and soak the split yellow moong dal in water for 2 hours, then drain it completely.
- 2. In a blender, grind the soaked moong dal with ginger and green chilies into a coarse paste.
- 3. Finely chop the cauliflower florets and coriander leaves, then add them to a mixing bowl.
- 4. Combine the moong dal paste, chickpea flour, rice flour, cumin seeds, turmeric powder, red chili powder, black salt, and regular salt in the bowl.
- 5. Gradually add water to the mixture and stir until it forms a thick batter. Ensure the batter is not too runny.
- 6. Sprinkle baking soda into the batter and mix well to aerate it for a fluffy texture.
- 7. Heat oil in a deep pan over medium heat until it reaches frying temperature.
- 8. Using a spoon, scoop small portions of the batter and carefully drop them into the hot oil.
- 9. Fry the pakoras in batches, turning them occasionally, until they are golden brown and crispy.
- 10. Remove the pakoras from the oil and place them on a paper towel to drain excess oil.
