Instructions
- 1. Rinse the fish fillets thoroughly and pat them dry with a paper towel.
- 2. Cut the fish fillets into even-sized strips, about 1 inch wide and 4 inches long.
- 3. In a bowl, mix rice flour, cornstarch, red chili powder, turmeric powder, garlic paste, salt, and lemon juice.
- 4. Add water gradually to the flour mixture to create a thick batter that coats the back of a spoon evenly.
- 5. Heat oil in a deep frying pan over medium heat until it reaches 180°C.
- 6. Dip each fish strip into the batter, ensuring it is fully coated, and carefully place it into the hot oil.
- 7. Fry the fish fingers in small batches for 4–5 minutes or until they turn golden and crisp.
- 8. Remove the fried fish fingers with a slotted spoon and drain excess oil on a paper towel.
- 9. For the chutney, blend mint leaves, coriander leaves, green chilies, yogurt, sugar, and a pinch of salt until smooth.
- 10. Pour the chutney into a bowl and chill it in the refrigerator for 10 minutes before serving.
- 11. Serve the crispy fish fingers hot alongside the chilled mint chutney for dipping.
