Crispy Fava Bean Patties With Mint Yogurt Recipe

A delightful Jain-friendly twist on falafel, these crispy fava bean patties are spiced with cumin and coriander and served with a refreshing mint yogurt sauce. Perfect for a satisfying dinner.
Ingredients
- 1 Bunch Coriander Leaves (Kotthambari)
- 1 Bunch Nectr Mint Leaves (Chemical Free)
- 400G Chtoura Foods Fava Beans Lebanese Recipe
- 100 g Premium Green Chilli
- 220 g Organically Grown Lemon
- 80 g Urban Platter Cayenne Pepper Powder
- 1 kg Simply Staples Mineral Rich Sea Salt
- 1 pack (1 kg) Jiwa 30 Degree Gluten Free Flour
- 850 g Oleev Smart Vitafit Edibale Vegetable Oil
- 100 g X 3 Mtr Coriander Powder Combo
- 100 g Everest White Pepper
Instructions
- 1. In a food processor, combine 250 g fava beans, 3 tablespoons chopped coriander leaves, 1/2 teaspoon cayenne pepper, 1/2 chopped green chili, 1 pinch of coarse salt, and 1 pinch of white pepper, and the zest of 1 lemon. Pulse until the mixture is moderately smooth.
- 2. Transfer the mixture to a bowl and stir in 1 teaspoon of flour until well combined. Do not process further.
- 3. Heat 3 inches of vegetable oil in a deep pot to 375°F. Using two tablespoons, shape the mixture into oval dumplings (quenelles) and carefully drop them into the hot oil. Fry in batches until the patties are dark golden brown, about 3-4 minutes per batch.
- 4. Remove the patties from the oil and drain briefly on kitchen paper. Sprinkle lightly with a pinch of salt while still warm.
- 5. In a small bowl, mix 6 finely chopped mint leaves, 2 teaspoons of lemon juice, 1 pinch of salt, and 1 pinch of white pepper. Stir until evenly combined.
- 6. Serve the crispy fava bean patties with the mint sauce and a side of lightly dressed salad for a complete meal.
