Ingredients
- 400 g Sweet Corn Kernels
- - Rice Flour
- 250g Green Chilli
- 100 g Coriander Leaves
- 50 g Cumin Powder
- 20 g Turmeric Powder
- 100 g Salt
- 200 ml Mustard Oil
Instructions
- 1. Chop the spinach leaves and coriander finely and set them aside.
- 2. Blend half of the corn kernels into a coarse paste; keep the remaining kernels whole for texture.
- 3. In a mixing bowl, combine the corn paste, whole corn kernels, spinach, coriander, rice flour, cumin, turmeric, salt, and finely chopped green chilies.
- 4. Mix the ingredients thoroughly to form a batter; adjust consistency with a few tablespoons of water if necessary.
- 5. Heat oil in a frying pan over medium heat until it's hot but not smoking.
- 6. Using a spoon, drop small portions of the batter into the hot oil to form fritters.
- 7. Fry the fritters for 3-4 minutes on each side until they turn golden and crispy.
- 8. Remove the fritters using a slotted spoon and place them on paper towels to drain excess oil.
- 9. Repeat the frying process with the remaining batter until all fritters are cooked.
- 10. Serve the fritters warm with a side of mint chutney or tomato ketchup.
