Ingredients
- 500 g Refined Flour
- - Rice Flour
- 500 g Onion
- 250g Green Chilli
- - Cumin Seeds / Jeera Seeds-250 Gms
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Salt
- 1 kg Water Chestnuts
- 5 ltr Guinea Filtered Groundnut Oil For Frying & Sauteing
- 1 Bunch Mint Leaves
- 100 g Coriander Leaves
- 250 ml Lemon Juice Concentrate
- 100 g Garlic
Instructions
- 1. Finely chop the onion, spinach leaves, and green chilies, and set them aside.
- 2. In a mixing bowl, combine chickpea flour, rice flour, cumin seeds, turmeric, red chili powder, and salt.
- 3. Gradually add water to the dry mixture, whisking until you achieve a smooth batter consistency.
- 4. Stir in the chopped onion, spinach, and green chilies into the batter until evenly distributed.
- 5. Heat oil in a deep pan over medium heat until it reaches frying temperature.
- 6. Drop spoonfuls of the batter into the hot oil, frying until the fritters are golden and crispy on all sides.
- 7. Remove the fritters from the oil and place them on a paper towel to drain excess oil.
- 8. For the dip, blend mint leaves, coriander leaves, garlic, lemon juice, and a pinch of salt until smooth.
- 9. Serve the warm fritters with the tangy mint dip on the side.
