Ingredients

  • 300 g Nutrich Chicken Thigh Boneless
  • 1 pack (500 g) Bhagyalakshmi Rice Flour
  • Pcs Epi Yogurt Strawbery
  • 100 g Catch Garlic Paste
  • 100 g Catch Ginger Paste
  • 50 g Everest Cumin Powder
  • - Red Chilli Powder
  • 20 g Turmeric Powder
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 1 Bunch Mint Leaves (Pudina)
  • 1 Bunch Coriander Leaves ( Kottambari Soppu )
  • 250 ml Keya Lemon Juice
  • 200 ml Mustard Oil

Instructions

  1. 1. Cut the chicken thighs into bite-sized pieces and marinate them with yogurt, garlic paste, ginger paste, cumin powder, coriander powder, red chili powder, turmeric powder, and salt for 20 minutes.
  2. 2. While the chicken marinates, prepare the rice flour dough by mixing it with a pinch of salt and water until pliable.
  3. 3. Roll out thin parathas using the rice flour dough and cook them on a hot griddle until lightly golden on both sides.
  4. 4. Heat oil in a pan and cook the marinated chicken pieces on medium heat until they are tender and slightly charred, about 8-10 minutes.
  5. 5. Blend mint leaves, coriander leaves, lemon juice, and a pinch of salt into a smooth chutney using a food processor or blender.
  6. 6. Spread a spoonful of mint chutney on each rice flour paratha and place a few cooked chicken tikka pieces in the center.
  7. 7. Roll up the paratha tightly around the chicken tikka and secure with parchment paper or toothpicks for ease of serving.
