Ingredients
- 100 g Milky Mist Cooking Unsalted Butter
- 200 g Peeled Sambhar Onion By Urban Harvest
- 1 pc (1 L) Sofit Unsweetened Almond Milk Drink
- 250 ml Coco Mama Coconut Milk
- 100 g Kale Leaf
- 5 kg Organic Tattva Whole Wheat Flour Chakki Atta
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
Instructions
- 1. Heat 2 tablespoons of unsalted butter in a large pan over medium heat.
- 2. Add 1 tablespoon of finely chopped onion and sauté until translucent, about 2-3 minutes.
- 3. Stir in 2 tablespoons of whole wheat flour, 1 teaspoon of salt, and 1/8 teaspoon of black pepper. Cook over low heat, stirring constantly, until the mixture is smooth and bubbly, about 2 minutes.
- 4. Gradually add 2 cups of coconut milk, stirring continuously to avoid lumps. Cook until the mixture thickens, about 5 minutes.
- 5. Add 2 packages (about 300 g each) of kale to the pan. Cook for 3-4 minutes, stirring occasionally, until the kale wilts and softens.
- 6. Transfer the mixture to a blender and blend until smooth. Be cautious with hot liquids and blend in batches if necessary.
- 7. Pour the blended soup back into the pan and stir in 1 cup of unsweetened almond milk. Heat gently over low heat, ensuring the soup does not boil.
- 8. Taste and adjust seasoning if needed. Serve the soup hot, optionally garnished with a sprinkle of whole-grain croutons or a drizzle of olive oil.
