- 150 g Spring Onion (Kandychi Path)
- 100 g Garlic - Single Clove
- 400 g Wickedgud 2X Fiber Penne Pasta | No Maida | Durum Wheat Semolina | Brown Rice | Healthy Diet Pasta
- 125 g Red Bell Pepper
- 1 ltr Bertolli Extra Virgin Olive Oil
- 250 ml Dabur Hommade Lemon Juice (Bottle)
- 80 g Knorr Vegetables Stock Cubes
- 400 g Agapi Protein Greek Yogurt (Natural)
Instructions
- 1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- 2. Add 3 tablespoons of minced garlic and 2 finely chopped spring onions to the skillet. Sauté for 2-3 minutes until fragrant and softened.
- 3. Stir in 1.5 pounds of diced red bell pepper and cook for 5 minutes, allowing the peppers to break down slightly.
- 4. Pour in 1 cup of vegetable stock and stir well to combine. Let the mixture simmer for 3-4 minutes.
- 5. Add 1/2 cup of lemon juice and 1/4 cup of chopped spring onion to the skillet. Stir gently and cook for 3-4 minutes to allow the flavors to meld.
- 6. Meanwhile, cook 1 pound of penne pasta according to package instructions. Drain and set aside.
- 7. Add the cooked penne to the skillet and toss to coat the pasta evenly with the sauce.
- 8. Stir in 1/2 cup of greek yogurt and mix until the sauce is creamy and well combined. Heat through for 1-2 minutes.
- 9. Serve immediately, garnished with additional spring onion if desired.
