Ingredients

  • 1 kg Basmati Rice
  • 200 ml Dabur Hommade Coconut Milk
  • - Cumin Seed
  • 500 ml Oil (For Frying)
  • 500 g Onion
  • 110 g Unpeeled Garlic Cloves
  • 20 g Turmeric Powder
  • medium Chilli Green Long
  • - Coriander Powder
  • - Red Chilli Powder
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 1 Bunch Coriander Leaves ( Kottambari Soppu )

Instructions

  1. 1. Rinse the rice thoroughly under cold water until the water runs clear.
  2. 2. Heat 1 tablespoon of vegetable oil in a pan and toast the cumin seeds for 30 seconds.
  3. 3. Add the rinsed rice to the pan and stir gently to coat with the cumin-infused oil.
  4. 4. Pour 350 ml of water into the pan with rice, add 1 teaspoon of salt, and cook covered on low heat until rice is tender.
  5. 5. Soak the soy chunks in hot water for 10 minutes, then drain and squeeze out excess water.
  6. 6. Heat 1 tablespoon of vegetable oil in a second pan and sauté finely chopped onions until golden brown.
  7. 7. Add minced garlic, grated turmeric, and sliced green chilies to the onions, stirring for 2 minutes.
  8. 8. Mix in coriander powder, chili powder, and 0.5 teaspoon of salt, cooking for 1 minute until aromatic.
  9. 9. Add the soy chunks to the pan and stir well to coat them with the spice mixture.
  10. 10. Pour in the coconut milk and 50 ml of water, simmering the curry for 10 minutes until thickened.
  11. 11. Adjust the seasoning if needed and garnish the curry with chopped fresh coriander (optional).
