- 1 kg Basmati Rice
- 200 ml Dabur Hommade Coconut Milk
- - Cumin Seed
- 500 ml Oil (For Frying)
- 500 g Onion
- 110 g Unpeeled Garlic Cloves
- 20 g Turmeric Powder
- medium Chilli Green Long
- - Coriander Powder
- - Red Chilli Powder
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
Instructions
- 1. Rinse the rice thoroughly under cold water until the water runs clear.
- 2. Heat 1 tablespoon of vegetable oil in a pan and toast the cumin seeds for 30 seconds.
- 3. Add the rinsed rice to the pan and stir gently to coat with the cumin-infused oil.
- 4. Pour 350 ml of water into the pan with rice, add 1 teaspoon of salt, and cook covered on low heat until rice is tender.
- 5. Soak the soy chunks in hot water for 10 minutes, then drain and squeeze out excess water.
- 6. Heat 1 tablespoon of vegetable oil in a second pan and sauté finely chopped onions until golden brown.
- 7. Add minced garlic, grated turmeric, and sliced green chilies to the onions, stirring for 2 minutes.
- 8. Mix in coriander powder, chili powder, and 0.5 teaspoon of salt, cooking for 1 minute until aromatic.
- 9. Add the soy chunks to the pan and stir well to coat them with the spice mixture.
- 10. Pour in the coconut milk and 50 ml of water, simmering the curry for 10 minutes until thickened.
- 11. Adjust the seasoning if needed and garnish the curry with chopped fresh coriander (optional).
- 12. Fluff the cooked jeera rice with a fork and plate it alongside the creamy soy chunk curry.
- 13. Serve hot and enjoy a satisfying and nutritious lunch.
