- 500 G Brown Rice
- 400G Chtoura Foods Boiled Chickpeas In Brine
- 250 ml Real Thai Unsweetened Coconut Milk
- - Onion-250 Gms
- 500 g Desi Tomato (Tamatar)
- 100 g Garlic - Single Clove
- loose Ginger
- 20 g Turmeric Powder
- 50 g Everest Cumin Powder
- - Red Chilli Powder
- 500 ml Oil (For Frying)
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
Instructions
- 1. Rinse the brown rice under running water and soak it for 15 minutes in a bowl of water.
- 2. In a pot, add 300ml water, soaked rice, and a pinch of salt, then cook until the rice is tender and water is absorbed.
- 3. Heat vegetable oil in a pan over medium heat, then add finely chopped onion, garlic, and ginger, sautéing until fragrant and golden.
- 4. Add chopped tomatoes to the pan and cook until they soften and form a thick base.
- 5. Stir in turmeric powder, coriander powder, cumin powder, and red chili powder, cooking for 1-2 minutes to toast the spices.
- 6. Add the cooked chickpeas to the pan, stirring well to coat them in the spice mixture.
- 7. Pour in coconut milk and a small amount of water to adjust consistency, then simmer for 10 minutes until the curry thickens.
- 8. Season the curry with salt to taste and garnish with freshly chopped coriander leaves.
