- 200 ml Coconut Milk
- - Baby Tomatoes
- - Tomato Ketchup
- - Rice Flour
- 20 g Turmeric Powder
- 50 g Cumin Powder
- - Coriander Powder
- 100 g Salt
- 200 ml Mustard Oil
- 1 kg Water Chestnuts
- 100 g Coriander Bunch (Dhaniya Patta)
Instructions
- 1. Rinse the rice thoroughly and cook it in water until tender, then set aside to cool slightly.
- 2. Cut the tofu into cubes, coat them lightly with rice flour, and sprinkle turmeric powder evenly over them.
- 3. Heat oil in a pan and fry the tofu cubes on medium heat until golden and crispy on all sides.
- 4. Blend tomatoes into a smooth puree using a mixer or blender, ensuring no chunks remain.
- 5. Heat oil in another pan, add cumin and coriander powder, and sauté for 30 seconds to release the aroma.
- 6. Pour the tomato puree into the pan and cook for 5-6 minutes until it thickens slightly, stirring occasionally.
- 7. Add coconut milk and water to the tomato mixture, stir well, and bring it to a gentle simmer for 3-4 minutes.
- 8. Season the sauce with salt and adjust spices to your taste before turning off the heat.
- 9. Assemble the rice bowl by placing cooked rice at the base, followed by crispy tofu cubes on top.
- 10. Generously pour the tangy tomato-coconut sauce over the tofu and rice, ensuring an even spread.
