Ingredients
- 100 g Quinoa
- 200 ml Coconut Milk
- - Green Peas
- 20 g Turmeric Powder
- 50 g Cumin Powder
- 50 Grms Red Chili Powder Handmade Spices 50 Grms
- - Coriander Powder
- 100 g Salt
- 200 ml Mustard Oil
- 1pc Watermelon
Instructions
- 1. Rinse the quinoa thoroughly under cold water to remove any bitterness.
- 2. In a pot, combine quinoa, coconut milk, water, and a pinch of salt. Bring to a boil.
- 3. Lower the heat, cover the pot, and let the quinoa simmer until fully cooked and fluffy, about 15 minutes.
- 4. While the quinoa cooks, heat oil in a large pan over medium heat.
- 5. Add chopped carrots, green beans, and peas to the pan. Stir-fry for 5-7 minutes until vegetables are tender.
- 6. Sprinkle turmeric, cumin, coriander, and chili powder over the vegetables. Mix well to coat evenly.
- 7. Add a splash of water to the pan if needed, ensuring the spices don’t stick to the bottom.
- 8. Once the vegetables are cooked, turn off the heat and sprinkle with fresh cilantro.
- 9. Fluff the cooked quinoa with a fork and transfer it to a serving dish.
- 10. Arrange the spiced vegetables over the quinoa and garnish with more fresh cilantro.
