Ingredients

  • 100 g Quinoa
  • 200 ml Coconut Milk
  • - Green Peas
  • 20 g Turmeric Powder
  • 50 g Cumin Powder
  • 50 Grms Red Chili Powder Handmade Spices 50 Grms
  • - Coriander Powder
  • 100 g Salt
  • 200 ml Mustard Oil
  • 1pc Watermelon

Instructions

  1. 1. Rinse the quinoa thoroughly under cold water to remove any bitterness.
  2. 2. In a pot, combine quinoa, coconut milk, water, and a pinch of salt. Bring to a boil.
  3. 3. Lower the heat, cover the pot, and let the quinoa simmer until fully cooked and fluffy, about 15 minutes.
  4. 4. While the quinoa cooks, heat oil in a large pan over medium heat.
  5. 5. Add chopped carrots, green beans, and peas to the pan. Stir-fry for 5-7 minutes until vegetables are tender.
  6. 6. Sprinkle turmeric, cumin, coriander, and chili powder over the vegetables. Mix well to coat evenly.
  7. 7. Add a splash of water to the pan if needed, ensuring the spices don’t stick to the bottom.
  8. 8. Once the vegetables are cooked, turn off the heat and sprinkle with fresh cilantro.
  9. 9. Fluff the cooked quinoa with a fork and transfer it to a serving dish.
  10. 10. Arrange the spiced vegetables over the quinoa and garnish with more fresh cilantro.
