- 1 kg Mangoes
- 250 ml Coconut Milk
- 500 g Sugar

- 1. Peel and dice the mangoes into small pieces. Set aside two cups of diced mango for later use.
- 2. In a blender, combine the remaining mango pieces with 250 ml of Cocomama coconut milk and the 400 ml can of Real Thai coconut cream. Blend until smooth and creamy.
- 3. Add 3/4 cup of Madhur refined sugar and a pinch of Keya Table Salt to the blender. Blend again to mix well.
- 4. Pour the blended mixture into a large mixing bowl. Add a tablespoon of Sams white cooking vinegar and the reserved mango pieces. Stir well to combine.
- 5. Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions. If you do not have an ice cream maker, pour the mixture into a shallow dish, and freeze, stirring every 30 minutes until it reaches the desired consistency.
- 6. Once churned or frozen, move the ice cream to an airtight container and freeze for at least 2 hours before serving.
