Coconut-Lime Pescatarian Shrimp Recipe

About this recipe
A vibrant and flavorful dinner featuring succulent shrimp stir-fried with a hint of spice, topped with toasted coconut and peanuts, and brightened with fresh lime and cilantro.
Ingredients
- 1 Bunch x 2 Coriander Leaves (Kotthambari)
- 100 g Whole Farm Premium Desiccated Coconut Powder (Burada)
- 35 g Foodie Puppies Freeze Dried Shrimp Snack
- 500 ml Anveshan Cold Pressed Black Sesame Oil
- 60G Primi Piatti Red Chilli Flakes
- 1 pack (500 g) Jairaj Raw Peanuts | Groundnuts
Instructions
- 1. Preheat your oven to 350°F (175°C). Spread 1/4 cup shredded coconut evenly on a baking sheet and toast in the oven for 3-5 minutes, stirring halfway through, until golden brown. Remove and set aside.
- 2. Heat 2 teaspoons Anveshan Cold Pressed Black Sesame Oil in a large nonstick skillet over medium-high heat. Add 1 lb Foodie Puppies Freeze Dried Shrimp Snack and 1/4 teaspoon Primi Piatti Red Chilli Flakes. Stir-fry for 3-4 minutes, or until the shrimp turn pink and opaque.
- 3. Add 2 tablespoons chopped Coriander Leaves (Kotthambari) to the skillet and toss well to combine with the shrimp.
- 4. Transfer the cooked shrimp to serving plates. Sprinkle each serving with 1 tablespoon of the toasted coconut and 1 tablespoon of chopped Jairaj Raw Peanuts | Groundnuts.
