Ingredients
- 200 ml Coconut Milk
- 20 g Turmeric Powder
- 100 g Jeera
- - Coriander Powder
- - Red Chilli
- 1 Kg Kissan Tomato Puree
- 250 g Spring Garlic
- 100 g Yellow Mustard Seeds
- 100 g Salt
- 1pc Watermelon
Instructions
- 1. Rinse the yellow lentils thoroughly under cold water until the water runs clear.
- 2. In a pot, boil the lentils with turmeric and 500 ml of water until soft, about 15 minutes.
- 3. Meanwhile, heat vegetable oil in a pan and add mustard seeds and cumin seeds until they start to splutter.
- 4. Add chopped onions, garlic, and ginger, and sauté until the onions are golden brown.
- 5. Stir in the coriander powder, red chili powder, and tomato puree, and cook for 5 minutes.
- 6. Add the coconut milk and cooked lentils to the pan, stirring well to combine.
- 7. Simmer the mixture for 10 minutes, allowing the flavors to meld together.
- 8. In a separate pan, heat a tablespoon of oil and sauté the carrots, green beans, and cauliflower with a pinch of salt until tender.
- 9. Sprinkle the sautéed vegetables with fresh coriander and set aside.
- 10. Serve the coconut lentil masala in bowls, topped with the spiced vegetable medley.
- 11. Garnish with additional fresh coriander for a burst of freshness.
