Ingredients

  • 1 pack (200 g) Wow! Coco Fresh Grated Coconut
  • 100 g Cashew Regular
  • 50 g Lilcoo Little Millet Poha – Organic Samai/Kutki/Sama Poha Protein Rich Travel Food For Babies & Toddlers
  • 250 ml Real Thai Unsweetened Coconut Milk
  • 200 g Nutrela Soya (Chunks)
  • 200 ml Mustard Oil
  • 100 g Orika Big Mustard Seeds
  • 50 g Pluckk Organic Curry Leaves
  • - Onion-250 Gms
  • medium Chilli Green Long
  • 20 g Turmeric Powder
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 1 Bunch Coriander Leaves ( Kottambari Soppu )
  • - Schweppes Lemon Lime 320ml

Instructions

  1. 1. Rinse the poha under running water until soft, then drain and set aside.
  2. 2. Soak the soy chunks in hot water for 10 minutes, then drain and squeeze out excess water.
  3. 3. Heat oil in a pan and add mustard seeds; let them crackle for a few seconds.
  4. 4. Add curry leaves, chopped onion, and green chilies, and sauté until the onions turn translucent.
  5. 5. Mix in the turmeric powder and salt, stirring well to combine the spices.
  6. 6. Add the soy chunks to the pan and cook for 5 minutes to infuse flavor.
  7. 7. Stir in the softened poha and gently mix to ensure even coating with spices.
  8. 8. Pour in coconut milk and cook for 2-3 minutes, allowing it to absorb into the poha.
  9. 9. Add cashews and cook for an additional 2 minutes for a crunchy texture.
  10. 10. Taste and adjust seasoning if needed, then turn off the heat.
  11. 11. Garnish with freshly chopped coriander before serving.
