Ingredients
- 100 g Quinoa
- 500 g Black Beans
- - Sweet Corn
- - Baby Tomatoes
- 1 piece Yellow Bell Pepper
- 1pc Avocado
- - Coriander Powder
- 50 g Cumin Powder
- 250 ml Olive Oil
- 100 g Salt
- 100 g Curry Leaves
- 1 kg Basmati Rice
- loose Ginger
- 500 g Curd
- 500 g Moong Dal
- 100 Ml Gowardhan Ghee
- - Red Chilli
- 200 g Table Salt
- 100 g Jeera
- 20 g Turmeric Powder
- 50 g Asafoetida Powder
- 500 ml Water
Instructions
- 1. Rinse and cook the quinoa in a pot with 300 ml of water until fluffy, about 15 minutes.
- 2. Dice the red bell pepper, halve the cherry tomatoes, and chop the fresh cilantro finely.
- 3. In a mixing bowl, combine the cooked black beans, sweet corn, and chopped vegetables.
- 4. Prepare a dressing by whisking together lime juice, olive oil, chipotle chili powder, cumin powder, and salt.
- 5. Fluff the cooked quinoa and layer it at the bottom of two serving bowls.
- 6. Add the bean and vegetable mixture evenly over the quinoa in both bowls.
- 7. Drizzle the prepared chipotle dressing generously over the bowls.
- 8. Slice the avocado and arrange it neatly on top of each bowl.
- 9. Garnish with chopped cilantro and serve immediately for a fresh and zesty lunch.
