A refreshing and flavorful medley of marinated vegetables, perfect for a light dinner or as a side dish. This vegan recipe combines tender-cooked veggies with a tangy herb dressing for a satisfying meal.
Ingredients
- 500 g Carrot
- 100 g Broccoli Florets
- 200 g Cauliflower Florets
- 3 pcs Cucumber Green
- 250 g Zucchini Green
- 100 g Sambar Onion Peeled
- 75 Nos Oregano Sachet
- 1 pc (50 g) On1Y Pepper Grinder
- 850 g Sundrop Lite Blended Cooking Oil
- 500 ml Colavita White Wine Vinegar
- 1 kg Akar Powder Salt
Instructions
- 1. In a saucepan, add 2 sliced carrots and a small amount of water. Cover and simmer for 2 minutes.
- 2. Add 1 cup of broccoli buds and 1 cup of cauliflower florets to the saucepan. Bring to a boil, then reduce the heat and simmer for 3 more minutes.
- 3. Drain the cooked vegetables and transfer them to a large mixing bowl.
- 4. Add 1 sliced cucumber, 1 sliced zucchini, and 1 diced onion to the bowl with the cooked vegetables. Mix gently to combine.
- 5. In a separate small bowl, whisk together 1/2 cup of cooking oil, 3 tablespoons of white wine vinegar, 1 teaspoon of oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.
- 6. Pour the dressing over the vegetable mixture and toss until all the vegetables are evenly coated.
- 7. Cover the bowl and refrigerate for at least 8 hours, stirring occasionally to ensure the flavors are well distributed.
- 8. Serve chilled as a light dinner or side dish. Enjoy!
