- 20 g Turmeric Powder
- - Red Chilli
- 100 g Coriander Powder
- 100 g Black Pepper Powder
- - Lemon Juice
- 20G Curry Leaves
- 250g Coriander
- 10G Salt
- - Mustard Seeds
- 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
Instructions
- Step 1: In a large mixing bowl, combine yogurt, turmeric powder, red chili powder, coriander powder, black pepper powder, garam masala powder, ginger-garlic paste, lemon juice, and salt. Whisk well until a smooth marinade forms.
- Step 2: Add the chicken pieces to the bowl and coat them evenly with the marinade. Cover the bowl with cling wrap and let it marinate for at least 30 minutes in the refrigerator to allow the flavors to infuse deeply.
- Step 3: Preheat the oven to 200°C (392°F). Line a baking tray with aluminum foil and grease it lightly with oil. Arrange the marinated chicken pieces on the tray, ensuring they do not overlap.
- Step 4: Roast the chicken in the preheated oven for 20 minutes. Turn the chicken pieces over, brush with a little oil, and roast for another 10 minutes until the chicken is cooked through and slightly charred on the edges.
- Step 5: In a small pan, heat 2 tablespoons of sesame oil over medium heat. Add mustard seeds and let them splutter. Toss in curry leaves and sauté for 30 seconds until fragrant. Pour this tempered oil over the roasted chicken for an authentic Chettinad flavor.
