- 200 ml Mustard Oil
- 20G Curry Leaves
Instructions
- Step 1: Clean and pat dry the chicken thighs. In a large mixing bowl, combine yogurt, lemon juice, ginger paste, garlic paste, Chettinad masala powder, turmeric powder, chili powder, and salt. Mix thoroughly to create a smooth marinade.
- Step 2: Add the chicken thighs to the marinade, ensuring they are evenly coated. Cover the bowl with cling film and let the chicken marinate in the refrigerator for 30 minutes to allow the flavors to penetrate.
- Step 3: Preheat your oven to 200°C (392°F). Line a baking tray with aluminum foil and brush it lightly with mustard oil to prevent sticking.
- Step 4: Arrange the marinated chicken thighs on the prepared baking tray. Scatter curry leaves around the chicken for added aroma. Place the tray in the oven and bake for 20 minutes, flipping the chicken halfway through for even cooking.
- Step 5: After baking, switch the oven to broil mode and broil the chicken for 5 minutes to achieve a chargrilled texture. Watch closely to avoid burning.
- Step 6: Remove the chicken from the oven and let it rest for 5 minutes. Garnish with fresh lemon wedges and serve hot for a delightful lunch.
