Ingredients

  • 100 g Coriander Leaves
  • 200 ml Coconut Milk
  • 500 g Onion
  • - Tomato Ketchup
  • 100 g Garlic
  • loose Ginger
  • 250g Green Chilli
  • - Red Chilli Powder
  • 50 g Cumin Powder
  • - Coriander Powder
  • 20 g Turmeric Powder
  • 100 g Salt
  • 200 ml Mustard Oil
  • 1 kg Water Chestnuts

Instructions

  1. 1. Rinse the red lentils thoroughly under running water until the water runs clear.
  2. 2. Finely chop the onion, tomato, garlic, ginger, and green chili, and set aside.
  3. 3. Heat the oil in a pot over medium heat and sauté the onions until translucent.
  4. 4. Add the garlic, ginger, and green chili, and cook for another 2 minutes until fragrant.
  5. 5. Stir in the chopped tomato, cumin, allspice, turmeric, and salt, cooking until the tomatoes soften.
  6. 6. Add the rinsed lentils to the pot and mix well to coat them in the spices.
  7. 7. Pour in the water and bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.
  8. 8. Stir in the coconut milk and let the stew simmer for another 5 minutes until creamy.
  9. 9. Taste and adjust seasoning, adding more salt if needed.
  10. 10. Garnish the stew with freshly chopped coriander leaves before serving.
