Ingredients

  • 100 g Garlic
  • - Orgaq Organicky White Fava Beans (Val) - 500gm | Indian Cuisine
  • 1 l Refined Soyabean Oil
  • 200 g Table Salt
  • 50 g Cumin Powder
  • 55 g Paprika Powder

Instructions

  1. 1. Rinse 1 cup of dried fava beans under cold water and soak them overnight in a large bowl with enough water to cover them completely.
  2. 2. Drain the soaked fava beans and transfer them to a pot. Add 4 cups of fresh water and bring to a boil over medium-high heat.
  3. 3. Reduce the heat to low, cover the pot, and let the beans simmer for about 1.5 hours, or until they are very soft and easily mashed.
  4. 4. Drain the cooked fava beans, reserving 1 cup of the cooking liquid.
  5. 5. Transfer the cooked fava beans to a food processor or blender. Add 2 cloves of minced garlic, 1 teaspoon of ground cumin, 1 teaspoon of paprika, 3 tablespoons of olive oil, and the reserved cooking liquid.
  6. 6. Blend the mixture until smooth and creamy, adding more cooking liquid if needed to reach the desired consistency.
  7. 7. Season the dip with salt to taste and blend again to combine.
  8. 8. Transfer the Bessara to a serving bowl. Drizzle with a bit of olive oil and sprinkle with a pinch of paprika for garnish.
