Ingredients

  • 100 g Coriander Leaves
  • 1 kg Basmati Rice
  • 500 g Onion
  • 250 g Carrot
  • - Bell Peppers
  • 1 pc Broccoli
  • 2 pcs Zucchini
  • 200 g Organic Tofu - Soy Paneer
  • 500Ml De Nigris Balsamic Vinegar
  • 200 g Table Salt
  • - Garlic Paste
  • 500 Ml Champion Oil
  • 90 g Dark Soy Sauce

Instructions

  1. 1. Press 200g of firm tofu to remove excess moisture: Wrap the tofu block in a clean kitchen towel or paper towels, place a heavy object (like a pan) on top, and let it sit for 15-20 minutes.
  2. 2. While the tofu is pressing, prepare the marinade: In a small bowl, mix 3 tablespoons balsamic vinegar, 2 tablespoons soy sauce, 1 tablespoon olive oil, 1 teaspoon minced garlic, 1 teaspoon grated ginger, and 1 teaspoon maple syrup or honey.
  3. 3. Cut the pressed tofu into 1-inch cubes and place them in a shallow dish. Pour the marinade over the tofu, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).
  4. 4. While the tofu marinates, prepare the vegetables: Thinly slice 1 medium bell pepper, 1 medium carrot, 1 small zucchini, and 1 cup of broccoli florets. Set aside.
  5. 5. Heat 1 tablespoon of oil in a non-stick pan or wok over medium-high heat. Add the marinated tofu cubes (reserve the marinade) and cook for 3-4 minutes on each side until golden brown. Remove the tofu from the pan and set aside.
  6. 6. In the same pan, add 1 tablespoon of oil and sauté 1 sliced onion for 2-3 minutes until translucent. Add the prepared vegetables and stir-fry for 5-6 minutes until tender-crisp.
  7. 7. Pour the reserved marinade into the pan with the vegetables and cook for 1-2 minutes, stirring constantly, until the sauce thickens slightly.
  8. 8. Add the cooked tofu back to the pan and gently toss to combine with the vegetables and sauce. Cook for an additional 1-2 minutes to heat through.
  9. 9. Taste and adjust seasoning with salt and pepper if needed. Garnish with freshly chopped coriander leaves or sesame seeds if desired.
  10. 10. Serve hot with steamed rice or noodles for a complete meal.
