Frequently asked questions

How can I tell if the dish is fully baked and ready to serve?
The dish is ready when the top layer is golden brown, and the vegetables are tender when pierced with a fork. If the top hasn’t browned after the additional 15 minutes, you can broil it briefly for a crisp finish, but monitor closely to avoid burning.
What role do the sambar onions play in this dish?
Sambar onions add a mildly sweet and aromatic flavor that complements the earthy potatoes and peas. If unavailable, you can substitute them with shallots or finely chopped regular onions, but the flavor may be slightly sharper.
Can this dish be made ahead of time and reheated?
Yes, you can prepare and bake the dish in advance, then refrigerate it for up to 2 days. Reheat it in a preheated oven at 350°F (175°C) for about 15-20 minutes, covered with foil to prevent drying out.
What is the best way to slice the potatoes for this recipe?
Slicing the potatoes paper-thin ensures they cook evenly and absorb the flavors from the soy milk and seasonings. Using a mandoline slicer or food processor will give you consistent, thin slices, which is crucial for the dish's texture.
