Baked Tilapia With Spinach And Vegetables Recipe

A diabetic-friendly dinner featuring baked tilapia, sautéed vegetables, and fresh spinach for a wholesome and flavorful meal.
Ingredients
- 100 g Kale Leaf
- 1 Pack Button Mushroom (Anabe)
- 100 g Broccoli Florets
- 100 ml Oleev Olivana Natural Olive Oil (Bottle)
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 1 pc (50 g) Everest Tasteeto Black Pepper | Grinder Cap Bottle
- 500Ml Pietro Coricelli Aceto Balsamic Vinegar
Instructions
- 1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with 1 teaspoon of olive oil.
- 2. Place the tilapia fillets in the prepared baking dish. Drizzle 1 teaspoon of olive oil over the fillets and season with salt and pepper to taste. Bake for 15-20 minutes, or until the fish flakes easily with a fork.
- 3. While the fish is baking, heat 2 tablespoons of olive oil in a large sauté pan over medium heat.
- 4. Add 2 cups of broccoli and 1/2 cup of sliced mushrooms to the pan. Cook for 8-10 minutes, stirring occasionally, until the vegetables are tender.
- 5. Arrange 1/4 cup of fresh kale leaves on each serving plate.
- 6. Once the fish is done, place it on top of the kale leaves. Add the sautéed vegetables around the fish.
- 7. Optionally, drizzle a small amount of balsamic vinegar over the kale and vegetables before serving.
