A hearty and diabetic-friendly baked spinach casserole, perfect for dinner. This vegetarian dish combines creamy sour cream, flavorful onion soup mix, and a cheesy topping for a satisfying meal.

Ingredients

  • 250 g Spinach - Chopped
  • 400 g Agapi Protein Greek Yogurt (Natural)
  • 100 ml Oleev Olivana Natural Olive Oil (Bottle)
  • 50 g On1Y Onion Powder
  • 1 kg Nutty Yogi Oats Flour (Gluten Free)

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Cook 500 g of fresh spinach in a large pan over medium heat until wilted, about 3-4 minutes. Drain any excess liquid and set aside.
  3. 3. In a mixing bowl, add the cooked spinach, 1 tablespoon of onion powder, and 1 cup of greek yogurt. Stir well until evenly combined.
  4. 4. Transfer the spinach mixture to a greased baking dish and spread it out evenly.
  5. 5. If desired, sprinkle 1/4 cup of oats flour over the spinach mixture and drizzle with 2 tablespoons of olive oil.
  6. 6. Bake in the preheated oven for 20 minutes, or until the top is golden.
  7. 7. Remove from the oven and let cool for a few minutes before serving.
