Instructions
- 1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- 2. In a large mixing bowl, combine 1 grated onion, 1 lb cooked and flaked salmon, and 1 beaten egg.
- 3. Add 1/4 cup bread crumbs to the mixture and stir until it holds together but is not overly dry.
- 4. Shape the mixture into small, flat cakes and place them on the prepared baking sheet.
- 5. Lightly brush the cakes with 1/4 cup oil to help them crisp up during baking.
