Ingredients
- 20 g Turmeric Powder
- 500 g Whole Farm Premium Quinoa Seeds
- - Frozen Mixed Vegetables
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 500Ml Gaia Extra Virgin Olive Oil (500ml)
- 100 g Catch Super Garam Masala
- 25 g Whole Black Pepper
- 250 ml Keya Lemon Juice
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
Instructions
- 1. Rinse the quinoa thoroughly under running water to remove any bitterness.
- 2. Combine quinoa, water, and a pinch of salt in a saucepan. Cook over medium heat until the quinoa is tender and water is absorbed, about 15 minutes.
- 3. Peel and finely grate the fresh turmeric, and set it aside for seasoning the vegetables.
- 4. Toss the frozen mixed vegetables with olive oil, grated turmeric, garam masala, salt, and black pepper.
- 5. Preheat the air fryer to 180°C and arrange the seasoned vegetables evenly in the basket.
- 6. Air-fry the vegetables for 12-15 minutes, shaking the basket halfway through for even cooking.
- 7. Fluff the cooked quinoa with a fork and transfer it to serving bowls.
- 8. Top the quinoa with the air-fried vegetables, spreading them evenly for a colorful presentation.
