Instructions
- 1. In a large mixing bowl, combine semolina, rice flour, plant protein powder, turmeric, and salt, mixing thoroughly.
- 2. Add water gradually to the dry mixture and stir until a smooth, lump-free batter forms.
- 3. Finely chop the frozen mixed vegetables and green chilies, then fold them into the batter along with cumin seeds and coriander leaves.
- 4. Preheat the air fryer to 180°C and lightly grease the tray with oil to prevent sticking.
- 5. Scoop small portions of the batter onto the air fryer tray, shaping them into fritter patties using a spoon.
- 6. Air-fry the fritters for 10-12 minutes or until they turn crispy and golden brown on both sides, flipping halfway through.
- 7. While the fritters cook, prepare the dip by blending mint leaves, tamarind paste, jaggery powder, and black salt with a splash of water until smooth.
- 8. Adjust the dip’s consistency by adding more water if needed and refrigerate for 5 minutes to chill.
- 9. Remove the cooked fritters from the air fryer and place them onto a serving plate lined with paper towels to absorb excess oil.
