Ingredients

  • 20G Curry Leaves
  • 500 g Rice
  • 1 piece Coconut
  • 500 G Ridge Gourd/Jhinge Tori(500Gm)
  • 200 ml Mustard Oil
  • 250g Turmeric
  • - Mustard Seeds
  • 10G Salt

Instructions

  1. Step 1: Cook the rice, cool it, and allow partial fermentation for a mild tangy flavor reminiscent of pakhala.
  2. Step 2: Mix the grated coconut, crushed mustard seeds, chopped curry leaves, turmeric, and salt into the cooked rice.
  3. Step 3: Thinly slice the boiled ridge gourd and drumstick flesh, then layer these with the rice mixture on the nori sheets.
  4. Step 4: Roll the nori sheets tightly into sushi rolls, sealing the edges with a touch of water.
  5. Step 5: Preheat the air fryer to 180°C (356°F). Brush the rolls lightly with mustard oil and place them in the fryer basket.
  6. Step 6: Air fry the sushi rolls for 6-8 minutes until the outside is lightly crispy but the inside remains tender.
  7. Step 7: Slice the sushi rolls into bite-sized pieces and serve warm or at room temperature.
