A creative twist on the classic Odia pakhala, transformed into sushi rolls with traditional flavors of mustard and curry leaves, air-fried for a unique texture.
Ingredients
- 20G Curry Leaves
- 500 g Rice
- 1 piece Coconut
- 500 G Ridge Gourd/Jhinge Tori(500Gm)
- 200 ml Mustard Oil
- 250g Turmeric
- - Mustard Seeds
- 10G Salt
Instructions
- Step 1: Cook the rice, cool it, and allow partial fermentation for a mild tangy flavor reminiscent of pakhala.
- Step 2: Mix the grated coconut, crushed mustard seeds, chopped curry leaves, turmeric, and salt into the cooked rice.
- Step 3: Thinly slice the boiled ridge gourd and drumstick flesh, then layer these with the rice mixture on the nori sheets.
- Step 4: Roll the nori sheets tightly into sushi rolls, sealing the edges with a touch of water.
- Step 5: Preheat the air fryer to 180°C (356°F). Brush the rolls lightly with mustard oil and place them in the fryer basket.
- Step 6: Air fry the sushi rolls for 6-8 minutes until the outside is lightly crispy but the inside remains tender.
- Step 7: Slice the sushi rolls into bite-sized pieces and serve warm or at room temperature.
