A unique Odia twist on parathas, stuffed with protein-rich chhena (fresh cottage cheese) and served with a tangy tomato-mustard curry. Air-frying ensures a healthy preparation while maintaining authentic flavors.
Ingredients
- 500 g Jaggery
- 500 Gms Buckwheat Flour
- 200 ml Mustard Oil
- 20 g Turmeric Powder
- 250g Green Chilli
- 250g Ginger
- 250g Coriander
- 10G Salt
Instructions
- Step 1: Make the dough by combining sifted whole wheat flour, a pinch of salt, and water. Knead until soft and pliable. Set aside to rest for 20 minutes.
- Step 2: Prepare the stuffing by mixing crumbled chhena with chopped coriander leaves, green chilies, a pinch of turmeric, and salt. Ensure the mixture is evenly combined.
- Step 3: Divide the dough into equal portions and roll into balls. Flatten each ball into a small disc, place a portion of the chhena stuffing in the center, and seal by pinching the edges together. Roll out gently into a paratha.
- Step 4: Preheat the air fryer to 200°C (392°F). Lightly brush the parathas with mustard oil and cook in the air fryer for 5 minutes on each side until golden brown and crisp.
- Step 5: Meanwhile, prepare the curry. Heat mustard oil in a pan and temper with panch phoran. Add grated ginger, chopped tomatoes, turmeric, and green chilies. Cook until the tomatoes soften.
- Step 6: Add jaggery and salt to the curry. Stir well and let it simmer for 5 minutes. Adjust consistency with water if needed.
- Step 7: Serve the air-fried chhena parathas hot with the tangy tomato-mustard curry.
