Ingredients

  • - Mustard Seeds
  • 500 ml Water
  • 250 g Carrot
  • 20G Curry Leaves
  • 250g Ginger
  • - Foxtail Millet Flour
  • 1 piece Coconut
  • 250g Green Chilli
  • 20 g Turmeric Powder
  • 10G Salt
  • 200 ml Mustard Oil

Instructions

  1. Step 1: Heat mustard oil in a pan and splutter mustard seeds and curry leaves. Add ginger and green chili, sauté for 30 seconds.
  2. Step 2: Add chopped carrots and green beans to the pan, stir-fry for 3 minutes. Mix in turmeric powder and salt.
  3. Step 3: Add the soaked foxtail millet and stir well. Pour in 250 ml of water, cover, and let cook on low heat for 15 minutes until millet is cooked and fluffy.
  4. Step 4: For the drumstick curry, in a separate pan, boil drumsticks with 250 ml of water, a pinch of turmeric, and salt for 8 minutes.
  5. Step 5: Blend grated coconut and ground mustard into a smooth paste with a little water.
  6. Step 6: Heat mustard oil in a pan, add green chili and curry leaves. Add the coconut-mustard paste and cook for 2 minutes, stirring continuously.
  7. Step 7: Add boiled drumsticks to the paste, mix well, and simmer for 5 minutes. Adjust salt and spice to taste.
  8. Step 8: Serve the millet upma with tangy drumstick curry on the side for a balanced meal.
