Ingredients
- - Mustard Seeds
- 500 ml Water
- 250 g Carrot
- 20G Curry Leaves
- 250g Ginger
- - Foxtail Millet Flour
- 1 piece Coconut
- 250g Green Chilli
- 20 g Turmeric Powder
- 10G Salt
- 200 ml Mustard Oil
Instructions
- Step 1: Heat mustard oil in a pan and splutter mustard seeds and curry leaves. Add ginger and green chili, sauté for 30 seconds.
- Step 2: Add chopped carrots and green beans to the pan, stir-fry for 3 minutes. Mix in turmeric powder and salt.
- Step 3: Add the soaked foxtail millet and stir well. Pour in 250 ml of water, cover, and let cook on low heat for 15 minutes until millet is cooked and fluffy.
- Step 4: For the drumstick curry, in a separate pan, boil drumsticks with 250 ml of water, a pinch of turmeric, and salt for 8 minutes.
- Step 5: Blend grated coconut and ground mustard into a smooth paste with a little water.
- Step 6: Heat mustard oil in a pan, add green chili and curry leaves. Add the coconut-mustard paste and cook for 2 minutes, stirring continuously.
- Step 7: Add boiled drumsticks to the paste, mix well, and simmer for 5 minutes. Adjust salt and spice to taste.
- Step 8: Serve the millet upma with tangy drumstick curry on the side for a balanced meal.
