A traditional Odia dish reimagined: mustard-marinated vegetables wrapped in banana leaves are paired with protein-rich sattu-stuffed ridge gourd rolls, cooked to perfection in an air fryer.
Ingredients
- - Grated Coconut
- 500 G Ridge Gourd/Jhinge Tori(500Gm)
- 250g Green Chilli
- 250g Coriander
- - Mustard Seeds
- 500 Gms Rice Flour
- NaN Sattu I Roasted Bengal Gram Flour
- 200 ml Mustard Oil
- 20 g Turmeric Powder
- 10G Salt
Instructions
- Step 1: Prepare the marination by mixing mustard seeds, turmeric powder, panch phoran, green chilies, grated coconut, and salt with 2 tablespoons of mustard oil.
- Step 2: Massage the drumstick pieces and hollowed ridge gourd with the mustard mixture. Let them marinate for 15 minutes.
- Step 3: In a bowl, mix sattu with 2 tablespoons of mustard oil, chopped coriander, and a pinch of salt to form a thick stuffing.
- Step 4: Stuff the marinated ridge gourd with the sattu mixture and secure the openings with toothpicks if needed.
- Step 5: Wrap the marinated drumstick pieces and stuffed ridge gourd in banana leaves. Secure the wraps with kitchen twine.
- Step 6: Preheat the air fryer to 180°C. Place the banana leaf parcels in the air fryer basket and bake for 25 minutes, flipping halfway through.
- Step 7: Serve the air-baked patrapoda and sattu-stuffed ridge gourd rolls warm, garnished with fresh coriander.
