Ingredients
- 1 piece Coconut
- 500 g Jaggery
- 500 ml Water
- 500 Gms Rice Flour
- 10G Cardamom Powder
- 10G Salt
- 200 ml Mustard Oil
Instructions
- Step 1: In a mixing bowl, combine rice flour and a pinch of salt. Gradually add boiling water while stirring to form a smooth, pliable dough. Cover and let rest for 15 minutes.
- Step 2: Heat a small pan and sauté the grated pumpkin and jaggery until it forms a thick paste. Add grated coconut and cardamom powder, mix well, and set aside to cool.
- Step 3: Divide the dough into equal portions and flatten each into a disc. Place a spoonful of the pumpkin mixture in the center, fold over, and seal the edges to form dumplings.
- Step 4: Preheat the air fryer to 180°C. Lightly grease the air fryer basket with mustard oil.
- Step 5: Arrange the dumplings in the basket without overcrowding and air-bake for 10-12 minutes until firm and slightly golden.
- Step 6: Serve warm, garnished with a sprinkle of fresh coconut.
