- 500 g Prawns
- 20 g Chicken Stock
- 500G Freshos Couscous Semolina
- 1 kg Bell Peppers
- 2 pcs Zucchini
- - Onion
- 250g Garlic
- 250 Ml Selektia Tartufi Extra Virgin Olive Oil
- 55 g Paprika Powder
- 50 g Cumin Powder
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 100 g Lemon
- 250g Coriander
- 10G Salt
- 50 g Black Pepper
Instructions
- Step 1: In a rice cooker, boil the chicken stock. Once boiling, turn off the heat and add the couscous. Cover and let it steam for 5 minutes. Fluff with a fork and set aside.
- Step 2: Heat 2 tablespoons of olive oil in a pan over medium heat. Add the minced garlic and chopped onion, sautéing until golden brown.
- Step 3: Add the diced zucchini, grated carrots, and red bell pepper to the pan. Sprinkle with paprika, cumin powder, turmeric powder, coriander powder, salt, and black pepper. Cook for 8 minutes, stirring occasionally until the vegetables soften but remain slightly crisp.
- Step 4: In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the cleaned prawns and sauté for 4-5 minutes until the prawns turn pink and opaque. Squeeze half the lemon juice over the prawns, and adjust seasoning as needed.
- Step 5: Combine the cooked couscous, sautéed vegetables, and prawns in a large serving bowl. Mix well and garnish with fresh coriander leaves and the remaining lemon juice.
