  • 500 g Curd
  • 250 g Spinach

  • 200 g Table Salt
  • 25 g Ginger Garlic Paste
  • 50g Everest Garam Masala
  • - White Pepper
  • 370 g Dijon Mustard Paste
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 500 Ml Champion Oil

Instructions

  1. 1. Rinse 1 cup of wild rice under cold water until the water runs clear, then drain and set aside.
  2. 2. In a medium pot, bring 2 cups of water to a boil. Add the rinsed wild rice, reduce the heat to low, cover, and simmer for 45-50 minutes or until the rice is tender and the grains have split open. Once cooked, drain any excess water and set aside.
  3. 3. While the rice cooks, marinate 300 grams of boneless chicken breast or thigh pieces with 1 teaspoon ginger-garlic paste, 1/2 teaspoon turmeric powder, 1 teaspoon red chili powder, 1/2 teaspoon garam masala, 1 tablespoon lemon juice, and salt to taste. Let it rest for 20 minutes.
  4. 4. Heat 1 tablespoon of oil in a pan over medium heat. Add the marinated chicken and cook for 6-8 minutes, turning occasionally, until fully cooked and golden brown. Remove from the pan and slice into bite-sized pieces.
  5. 5. In the same pan, add 1 teaspoon oil and sauté 1/2 cup diced onions until translucent. Add 1/2 cup diced bell peppers, 1/2 cup chopped carrots, and 1/2 cup broccoli florets. Stir-fry for 4-5 minutes until the vegetables are tender yet crisp. Season with salt and pepper to taste.
  6. 6. Prepare the dressing by whisking together 2 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon honey, 1/2 teaspoon Dijon mustard, and a pinch of salt and pepper in a small bowl.
  7. 7. Assemble the power bowls: Divide the cooked wild rice equally between two or three bowls. Top with the cooked chicken pieces, sautéed vegetables, and additional toppings like avocado slices, cherry tomatoes, or boiled eggs if desired.
  8. 8. Drizzle the prepared dressing over the bowls and garnish with fresh coriander leaves or sesame seeds.
  9. 9. Serve the Wild Rice and Chicken Power Bowls immediately, optionally with a side of yogurt or extra lemon wedges.
