Ingredients
- 1 kg Basmati Rice
- 1 head Cauliflower
- 1 kg Bell Peppers
- 250 G Kabuli Chana
- 1 pc (approx. 500 g to 800 g) Cabbage
- - Tandoori Seasoning 50g
- 200 g Dahi
- 200 ml Mustard Oil
- 100 g Hing Khoda
- 100 g Coriander Leaves
- 1Bunch Pudina
- 50 g Black Pepper Powder
- 250g Green Chilli
- 250 ml Lemon Juice Concentrate
- 100 g Salt
Instructions
- 1. Rinse the basmati rice thoroughly and cook it according to package instructions until light and fluffy. Set aside.
- 2. In a large mixing bowl, combine cauliflower florets, diced bell peppers, and cooked chickpeas. Add tandoori spice mix, 2 tbsp yogurt, 1 tbsp mustard oil, lemon juice, and salt. Mix well and marinate for 20 minutes.
- 3. Heat the remaining mustard oil in a large skillet over medium heat. Add hing and sauté briefly to release its aroma. Add the marinated vegetables and cook for 8-10 minutes, stirring occasionally, until slightly charred and tender.
- 4. In a separate bowl, whisk the remaining yogurt with black pepper and chopped mint to create a tangy dressing.
- 5. To assemble the bowl, layer the cooked basmati rice, shredded cabbage, and tandoori veggies. Drizzle the yogurt dressing on top.
- 6. Garnish with chopped coriander leaves and optional green chili for an extra kick. Serve immediately and enjoy this wholesome meal.
