A fragrant, layered rice dish with perfectly spiced vegetables cooked in dum style for a rich and authentic dinner experience.
Ingredients
- Pcs Epi Yogurt Mango
- 150 Gms Cloves
- 500 ml Water
- 1 kg Basmati Rice
- 250 g Carrot
- 1Kg Potato
- 200 g Green Peas
- - Onion
- 250g Coriander

- 500 g Ghee
- 75 G Cinnamon Stick/ Dal Chini 75 Grams
- 20 g Turmeric Powder
- - Red Chilli
- - Suhana Biryani Masala 50g Box
- 10G Salt
Instructions
- Step 1: Heat oil and ghee in a large pan. Add cinnamon, cardamom, and cloves. Sauté for 1 minute.
- Step 2: Add sliced onions and fry until golden brown. Reserve half of the fried onions for garnishing.
- Step 3: Add ginger-garlic paste and sauté until aromatic. Mix in diced vegetables, chopped tomato, and sauté for 5 minutes.
- Step 4: Add turmeric powder, red chili powder, biryani masala, and salt. Stir well and cook for another 2 minutes.
- Step 5: Lower the heat and mix in whisked yogurt, coriander leaves, and mint leaves. Allow the vegetable mixture to simmer for 5 minutes.
- Step 6: In a separate pot, boil water with a pinch of salt and cook soaked basmati rice until 70% done. Drain and set aside.
- Step 7: Layer the half-cooked rice over the vegetable mixture in the pan. Sprinkle reserved fried onions and a few mint leaves on top.
- Step 8: Cover the pan tightly and cook on low heat (dum style) for 20 minutes. Turn off the heat and let it rest for 5 minutes.
- Step 9: Gently mix the layers before serving, ensuring the rice remains fluffy.
