Ingredients
- 20G Curry Leaves
- 250 ml Coconut Milk
- 500 g Jaggery
- 200 g Green Peas
- 200 ml Sesame Oil
- 250g Coriander
- 1 kg Rice
- 500 g Toor Dal
- - Mustard Seeds
- 500 ml Water
- 20 g Turmeric Powder
- 10G Salt
Instructions
- Step 1: In the rice cooker, combine the rinsed rice, soaked toor dal, turmeric powder, and 4 cups of water. Cook until soft and mushy.
- Step 2: Heat sesame oil in a pan. Add mustard seeds and let them splutter. Add curry leaves, red chilies, and hing. Sauté for a minute.
- Step 3: Add the chopped vegetables (carrots, green beans, green peas, and tomatoes) to the pan. Cook on medium flame for 5-7 minutes.
- Step 4: Stir in tamarind pulp, Bisi Bele Bath powder, jaggery, and salt. Add 1 cup of water and let the mixture simmer until the vegetables are tender.
- Step 5: Pour the cooked vegetable mixture into the rice cooker with the cooked rice and dal. Mix thoroughly.
- Step 6: Add coconut milk and adjust the consistency with more water if necessary. Let the mixture simmer in the rice cooker for 5-10 minutes to absorb all flavors.
- Step 7: Garnish with fresh coriander leaves and serve hot with a side of papad or vegan pickle for authenticity.
