Ingredients

  • 20G Curry Leaves
  • 250 ml Coconut Milk
  • 500 g Jaggery
  • 200 g Green Peas
  • 200 ml Sesame Oil
  • 250g Coriander
  • 1 kg Rice
  • 500 g Toor Dal
  • - Mustard Seeds
  • 500 ml Water
  • 20 g Turmeric Powder
  • 10G Salt

Instructions

  1. Step 1: In the rice cooker, combine the rinsed rice, soaked toor dal, turmeric powder, and 4 cups of water. Cook until soft and mushy.
  2. Step 2: Heat sesame oil in a pan. Add mustard seeds and let them splutter. Add curry leaves, red chilies, and hing. Sauté for a minute.
  3. Step 3: Add the chopped vegetables (carrots, green beans, green peas, and tomatoes) to the pan. Cook on medium flame for 5-7 minutes.
  4. Step 4: Stir in tamarind pulp, Bisi Bele Bath powder, jaggery, and salt. Add 1 cup of water and let the mixture simmer until the vegetables are tender.
  5. Step 5: Pour the cooked vegetable mixture into the rice cooker with the cooked rice and dal. Mix thoroughly.
  6. Step 6: Add coconut milk and adjust the consistency with more water if necessary. Let the mixture simmer in the rice cooker for 5-10 minutes to absorb all flavors.
  7. Step 7: Garnish with fresh coriander leaves and serve hot with a side of papad or vegan pickle for authenticity.
