Ingredients
- 500 g Poha
- 6 pcs White Eggs
- 500 g Onion
- medium Chilli Green Long
- 100 g Curry Leaves
- 100 g Yellow Mustard Seeds
- 20 g Turmeric Powder
- 100 g Salt
- 50 g Black Pepper Powder
- 250 ml Lemon Juice Concentrate
- 100 g Coriander Leaves
- 200 ml Mustard Oil
Instructions
- 1. Rinse the poha in a colander under running water until soft, then set aside to drain completely.
- 2. In a pan, heat 2 tsp of oil over medium heat. Add mustard seeds and let them splutter, followed by curry leaves, chopped green chilies, and finely chopped onion. Sauté until the onions turn translucent.
- 3. Add turmeric powder and a pinch of salt to the sautéed mixture, stir well, and then add the boiled mixed sprouts. Cook for 4-5 minutes, stirring occasionally.
- 4. Add the softened poha to the pan and mix gently to combine all the ingredients. Adjust salt and cook for another 3-4 minutes. Turn off the heat and sprinkle lemon juice and freshly chopped coriander leaves on top. Set aside.
- 5. In a separate bowl, beat the eggs with a pinch of salt, black pepper powder, and finely chopped green chilies.
- 6. Heat 1 tsp of oil in a non-stick pan over medium heat. Pour half of the beaten eggs into the pan and spread evenly to form a thin omelette. Cook for 2-3 minutes on one side, flip, and cook for another 1-2 minutes. Repeat with the remaining egg mixture.
- 7. Serve the Sprouts Poha warm with the freshly made omelette on the side or placed on top. Garnish with additional chopped coriander if desired.
