Ingredients
- 100 g Baby Spinach
- 141 g Pam Grilling Grillades Cooking Spray
- 200 g Organigram Chia Seeds
- 250 ml Coco Mama Coconut Milk
Instructions
- 1. Separate the chia seeds and whites into two bowls. Add 1 tablespoon of coconut milk to the chia seeds and whisk until combined. In the other bowl, whisk the egg whites until medium soft peaks form. Gently fold the egg whites into the chia seed mixture, being careful not to deflate the mixture.
- 2. Heat a small non-stick frying pan over medium heat and spray lightly with cooking oil. Add 1/2 cup of baby spinach leaves and cook for 1-2 minutes until wilted. Remove the spinach from the pan and set aside. Wipe the pan clean.
- 3. Spray the pan again with cooking oil and return it to medium heat. Pour the chia seed mixture into the pan, spreading it evenly. Cook for 2-3 minutes or until the surface is nearly firm.
- 4. Arrange the cooked spinach over one half of the omelette. Carefully fold the other half over the filling to enclose it.
- 5. Cook for an additional 1-2 minutes to allow the omelette to fully set. Slide the omelette onto a plate and serve immediately. Repeat the process for additional servings if needed.
